
Chennai Street Style Chilli Beef
A fiery, glossy stir-fry of tender beef with bold aromatics and lively South Indian street-food character.
INGREDIENTS
- 600g Beef Curry Cut
- 1 Onion
- 3 tsp Garlic Paste
- 2 tsp Ginger
- 2 Green Chilli
- 4 Dried Red Chilli
- 0.5 tsp Turmeric
- 1 tsp Ground Black Pepper
- 1 tsp Garam Masala
- 4 tbsp Coriander
- 4 tbsp Cooking Oil
- 1 tsp Salt
- 2 tsp Lime Juice

Trim the beef of excess connective tissue and cut it into thin strips, approximately 5 mm thick. Keep it refrigerated while preparing the aromatics, and wash the knife and board after use.

Combine the beef with 3 tsp of garlic paste, 2 tsp of ginger, 0.5 tsp of turmeric, 1 tsp of ground black pepper, 1 tsp of salt and 2 tsp of lime juice. Set aside to marinate for 10 minutes.

Heat 4 tbsp of cooking oil in a wide wok or heavy frying pan over medium-high heat. Add 1 onion (thinly sliced), 2 green chillis (thinly sliced) and 4 dried red chillis, then stir-fry for 3 minutes until the onion softens and begins to brown.

Add the marinated beef in a single layer. Stir-fry for 8 to 10 minutes, turning frequently, until the strips are browned and no pink remains in the thickest pieces. If the pan becomes dry before the beef is cooked, add 1 to 2 tablespoons of water.

Add 1 tsp of garam masala and stir-fry for 1 minute until fragrant and the beef is coated in the dry spice mixture.

Turn off the heat, scatter over 4 tbsp of coriander (chopped), and rest the beef for 3 minutes before serving. Do not reuse the raw-beef plate or utensils unless they have been washed with hot soapy water.
