
Chicken Omurice with Tomato Rice
Tomato-seasoned rice and diced chicken are wrapped in a tender omelette for a comforting Japanese-style main course.

- 400g Chicken Thigh
- 600g Cooked Rice
- 6 Egg
- 300g Tomato
- 100g Onion
- 4 tbsp Ketchup
- 2 tsp Soy Sauce
- 4 tbsp Cooking Oil
- 2 tbsp Butter
- 2g Salt
- 1g Black Pepper

Cut 400g of chicken thigh into small, even pieces. Keep the raw chicken on a separate board and plate, and wash hands, board, knife, and utensils with hot soapy water after use. Dice 100g of onion and 300g of tomato.

Heat 1.32 tbsp of cooking oil in a large nonstick skillet over medium heat. Add 400g of chicken thigh, season with 1g of salt and 0.5g of black pepper, and stir-fry for 6 to 8 minutes, until the pieces are opaque throughout, the juices run clear, and the thickest pieces reach 75°C for 30 seconds. Transfer the cooked chicken to a clean plate.

Add 2 tbsp of butter to the skillet over medium heat. Add 100g of onion and cook for 3 to 4 minutes until softened. Add 300g of tomato and cook for 3 minutes until juicy and slightly broken down.

Return the cooked chicken to the skillet. Stir in 4 tbsp of ketchup and 2 tsp of soy sauce, then add 600g of cooked rice. Toss and press gently for 3 to 4 minutes, until the rice is hot, evenly coated, and no longer clumped. Taste and adjust seasoning with a small pinch of salt or pepper if needed. Divide the tomato rice among four warm plates or shape it into four mounds.

Whisk 6 eggs in a bowl until blended. Heat the remaining 2.68 tbsp of cooking oil in a clean nonstick skillet over medium-low heat. Pour in one quarter of the beaten egg mixture, swirl to form a thin round, and cook for 45 to 60 seconds until the underside is set while the surface is still slightly glossy. Slide the omelet onto one rice mound. Repeat with the remaining egg mixture to make four omelets, adding a little more oil only if the pan becomes dry.

Fold or gently drape each omelet around its rice mound. Serve immediately while hot, making sure the chicken remains fully cooked and the egg is set enough for safe eating.
