
Chicken Souvlaki Pita Bites
Juicy seasoned chicken and fresh tomato tucked into small toasted bread portions for an easy Mediterranean-style snack.
INGREDIENTS
- 600g Chicken Thigh
- 2 Pita Bread
- 240g Greek Yogurt
- 2 Tomato
- 1 Red Onion
- 1 Lemon
- 4 cloves Garlic
- 4 tbsp Olive Oil
- 2 tsp Dried Oregano
- 0.5 tsp Ground Cumin
- 1 tsp Salt
- 0.5 tsp Black Pepper

Cut 600g of chicken thigh into 2 cm pieces. In a clean bowl, combine 4 tbsp of olive oil, the juice of 1 lemon, 4 cloves of garlic (minced), 2 tsp of dried oregano, 0.5 tsp of ground cumin, 1 tsp of salt, and 0.5 tsp of black pepper. Add the chicken and coat thoroughly. Cover and marinate in the refrigerator for 20 minutes.

While the chicken marinates, stir 240g of greek yogurt with a pinch of salt and a little lemon juice from the listed lemon until smooth. Dice 2 tomatoes and finely slice 1 red onion. Keep the salad vegetables separate from the raw chicken and its marinade.

Heat a heavy frying pan over medium-high heat. Add the marinated chicken in a single layer, leaving space between pieces. Cook for 8 to 10 minutes, turning frequently, until browned on all sides, the juices run clear, and the thickest pieces reach 75°C for 30 seconds. Wash the raw-chicken bowl and utensils with hot soapy water before reuse.

Warm 2 pita breads in a dry pan for 30 to 45 seconds per side until pliable. Cut it into small wedges or bite-size squares.

Assemble the pita bites by spreading the yogurt sauce over each pita piece, then topping with cooked chicken, 2 tomatoes, and 1 red onion. Serve immediately.
