
Chicken Yakisoba with Tomato and Egg
Chewy egg noodles are stir-fried with juicy tomato, browned chicken, and softly scrambled egg in a savoury soy-seasoned sauce.
INGREDIENTS
- 500g Chicken Thigh
- 600g Yakisoba Noodle
- 4 Egg
- 2 Tomato
- 200g Cabbage
- 1 Onion
- 100g Carrot
- 4 tbsp Cooking Oil
- 4 tbsp Soy Sauce
- 2 tbsp Oyster Sauce
- 2 tbsp Worcestershire Sauce
- 2 tsp Sugar
- 0.5 tsp Black Pepper

Prepare all ingredients before cooking. Cut 500g of chicken thigh (boneless and skinless) into bite-size pieces. Slice 1 onion thinly, shred 200g of cabbage, julienne 100g of carrot, and cut 2 tomatoes into wedges. Keep the raw chicken on its own board and plate, and wash hands and utensils with hot soapy water after handling it.

Whisk 4 eggs (beaten) in a small bowl. Mix 4 tbsp of soy sauce, 2 tbsp of oyster sauce, 2 tbsp of worcestershire sauce, and 2 tsp of sugar in another bowl to make the yakisoba sauce.

Heat a large wok or frying pan over medium-high heat for 1 minute. Add 1 tbsp of cooking oil and pour in the beaten egg. Scramble for 45 to 60 seconds until softly set, transfer to a clean plate, and set aside.

Add 2 tbsp of cooking oil to the hot pan. Add the chicken in a single layer and stir-fry for 8 to 10 minutes, turning frequently, until browned outside and no pink remains in the thickest pieces. Check that the chicken reaches 75°C for 30 seconds if using a thermometer. Transfer it to a clean plate, not the plate used for raw chicken.

Add 1 tbsp of cooking oil to the pan. Stir-fry 1 onion, 200g of cabbage, and 100g of carrot for 3 to 4 minutes, until the vegetables begin to soften but retain some bite.

Loosen 600g of yakisoba noodle according to the packet directions, then add it to the pan with the sauce mixture. Toss and stir-fry for 3 to 4 minutes until the noodles are hot, glossy, and evenly coated.

Return the cooked chicken and scrambled egg to the pan. Add 2 tomatoes and 0.5 tsp of black pepper, then toss gently for 1 to 2 minutes until the tomato is warmed but still holds its shape. Taste and adjust seasoning with a small amount of additional soy sauce only if needed. Serve immediately.
