Egg Dosa

A crisp, lacy rice-and-lentil pancake topped with a softly cooked egg and served with a simple spiced tomato chutney.

INGREDIENTS

  • 1 cup Rice
  • 4 tbsp Urad Dal
  • 4 Egg
  • 4 tsp Cooking Oil
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 Green Chilli
  • 1 Onion

    Rinse 1 cup of rice and 4 tbsp of urad dal separately. Soak them in separate bowls with plenty of water for 4 hours.

    Drain the soaked rice and urad dal. Blend them with enough fresh water to make a smooth, pourable batter. Stir in 1 tsp of salt, then cover and ferment in a warm place for 8 hours or overnight.

    Finely chop 1 green chilli and 1 onion. Beat 4 eggs with the chopped chilli, onion, and 0.5 tsp of black pepper.

    Stir the fermented dosa batter. Heat a nonstick or well-seasoned skillet over medium-high heat. Pour enough batter to make a thin dosa and spread it in a circular motion.

    Drizzle 4 tsp of cooking oil around the dosa. Pour the beaten egg mixture over the surface and spread it gently. Cook for 2 to 3 minutes, until the egg is set, the underside is golden, and the edges lift easily.

    Fold the dosa and transfer it to a plate. Repeat with the remaining batter and egg mixture, making four egg dosas. Serve hot.
