
Kerala Beef Fry
A richly spiced, dry-fried beef dish with deep warmth and a satisfying roasted finish.
INGREDIENTS
- 500g Beef Steak
- 4 tbsp Coconut Oil
- 2 Onion
- 4 cloves Garlic
- 2 tbsp Ginger
- 2 Green Chilli
- 12 Curry Leaves
- 0.5 tsp Ground Turmeric
- 2 tsp Ground Black Pepper
- 2 tsp Ground Coriander
- 1 tsp Garam Masala
- 1 tsp Fennel Seed
- 1 Cinnamon Stick
- 4 Clove
- 240ml Water
- 2 tsp Salt

Trim excess surface fat from 500g of beef steak and cut it into bite-sized strips. Keep the raw beef on a separate board and wash hands, board, and knife thoroughly after preparation.

Put the beef in a heavy saucepan with 2 onions (sliced), 4 cloves of garlic (crushed), 2 tbsp of ginger (finely grated), 2 green chillis (sliced), 0.5 tsp of ground turmeric, 2 tsp of ground black pepper, 2 tsp of ground coriander, 1 tsp of fennel seed, 1 cinnamon stick, 4 cloves, 2 tsp of salt, and 240ml of water. Stir well.

Cover the saucepan and simmer over medium-low heat for 55 minutes, stirring every 10 minutes, until the beef is tender and the liquid has reduced to a thick coating. Add a small splash of water if the pan becomes dry before the beef is tender.

Heat 4 tbsp of coconut oil in a wide frying pan over medium heat. Add the cooked beef mixture and fry for 12 minutes, stirring frequently, until the beef is fully cooked through, browned at the edges, and no raw-looking centre remains.

Add 12 curry leaves to the pan and fry with the beef for 3 minutes, until the leaves are crisp and the masala is dark, dry, and aromatic.

Stir in 1 tsp of garam masala and fry for 2 minutes. Remove the cinnamon stick and cloves, then rest the beef fry for 3 minutes before serving.
