
Kerala Beef Roast
A deeply spiced, slow-cooked beef dish with a rich roasted masala and tender texture.
INGREDIENTS
- 500g Beef Steak
- 4 tbsp Coconut Oil
- 2 Onion
- 6 cloves Garlic
- 2 tbsp Ginger
- 1 Green Chilli
- 0.5 tsp Turmeric Powder
- 2 tsp Black Pepper
- 2 tsp Coriander Powder
- 1 tsp Chilli Powder
- 1 tsp Garam Masala
- 1 tsp Fennel Seeds
- 1 Cinnamon Stick
- 4 Cardamom Pod
- 4 Clove
- 8 Curry Leaf
- 300ml Water
- 1 tsp Salt

Cut 500g of beef steak into bite-sized pieces. Place it in a bowl with 0.5 tsp of turmeric powder, 2 tsp of black pepper, 2 tsp of coriander powder, 1 tsp of chilli powder, and 1 tsp of salt. Mix thoroughly and leave to marinate for 15 minutes.

Heat 2 tbsp of coconut oil in a heavy pot over medium-high heat. Add 1 cinnamon stick, 4 cardamom pods, 4 cloves, and 1 tsp of fennel seeds. Fry for 30 seconds until fragrant.

Add 2 onions (thinly sliced), 6 cloves of garlic (minced), 2 tbsp of ginger (finely chopped), and 1 green chilli (slit lengthwise). Cook for 8 to 10 minutes, stirring often, until the onion is deep golden brown.

Add the marinated beef and stir-fry for 6 to 8 minutes, until the pieces are browned on the outside and no raw surface remains.

Add 300ml of water and stir well, scraping the base of the pot. Cover and simmer gently for 75 to 85 minutes, stirring every 15 minutes, until the beef is tender and a thermometer inserted into the thickest piece reaches at least 63°C, followed by a 3-minute rest.

Remove the lid and simmer for 10 to 15 minutes until the liquid has reduced to a thick coating. Stir in 1 tsp of garam masala and 8 curry leaves and cook for 2 minutes until fragrant.

Stir in 2 tbsp of coconut oil and cook for 3 to 5 minutes, until the beef is dark, glossy, and coated in the masala. Rest for 3 minutes before serving.
