
Mayak Eggs with Tomatoes
Jammy boiled eggs marinated in a savory soy-garlic dressing and paired with fresh tomatoes as a snackable banchan.
INGREDIENTS

- 300g Tomato
- 4 tbsp Soy Sauce
- 4 tbsp Water
- 2 tsp Sugar
- 2 cloves Garlic
- 1 Spring Onion
- 2 tsp Sesame Oil
- 2 tsp Sesame Seed
- 1 tsp Salt

Bring a saucepan of water to a gentle boil. Lower in 6 eggs, using the eggs straight from the refrigerator, and simmer for 6 minutes for jammy yolks or 8 minutes for firmer yolks. Transfer immediately to iced water for 5 minutes, then peel carefully.

Dice 300g of tomato into small pieces. Finely mince 2 cloves of garlic and slice 1 spring onion, if available.

Mix 4 tbsp of soy sauce, 4 tbsp of water, 2 tsp of sugar, 2 cloves of garlic, 2 tsp of sesame oil, and 2 tsp of sesame seed in a shallow container. Stir until the sugar dissolves, then fold in the diced tomato and sliced spring onion.

Place the peeled eggs in the marinade and turn them gently to coat. Cover and refrigerate for at least 20 minutes, turning once after 10 minutes so the seasoning reaches all sides.

Serve the marinated eggs with the tomatoes and spoon the marinade over them. Add 1 tsp of salt only if needed after tasting, since the soy sauce is already salty.
