Mutton Ghee Roast

Tender shoulder is slow-cooked with roasted spices, garlic, tangy tomato, and plenty of aromatic ghee until deeply browned and richly coated.

INGREDIENTS

  • 750g Mutton Shoulder
  • 120g Ghee
  • 1 Onion
  • 6 cloves Garlic
  • 2 tsp Ginger
  • 8 Dried Red Chilli
  • 3 tsp Coriander Seed
  • 1 tsp Cumin Seed
  • 1 tsp Fennel Seed
  • 0.25 tsp Fenugreek Seed
  • 1 tsp Black Pepper
  • 0.5 tsp Turmeric
  • 2 tsp Tamarind Paste
  • 2 tsp Brown Sugar
  • 2 tsp Salt
  • 300ml Water

STEPS

    Place 750g of mutton shoulder in a bowl with 0.5 tsp of turmeric, 2 tsp of salt and 300ml of water. Mix, cover, and refrigerate for 30 minutes while preparing the masala.

    Heat a dry skillet over medium heat. Add 8 dried red chillis, 3 tsp of coriander seed, 1 tsp of cumin seed, 1 tsp of fennel seed, 0.25 tsp of fenugreek seed and 1 tsp of black pepper. Toast for 2 to 3 minutes until fragrant, taking care that the spices do not darken or burn.

    Transfer the toasted spices to a grinder. Add 6 cloves of garlic (peeled), 2 tsp of ginger, 2 tsp of tamarind paste and 2 tsp of brown sugar, then grind with a little water into a smooth, thick masala paste.

    Heat 120g of ghee in a heavy pot over medium heat. Add 1 onion (finely sliced) and cook for 8 to 10 minutes until soft and golden brown.

    Add the masala paste and fry for 4 to 5 minutes, stirring continuously, until glossy and the raw spice aroma has disappeared.

    Add the marinated 750g of mutton shoulder and toss thoroughly in the masala. Cook uncovered for 8 to 10 minutes, turning often, until the meat is browned on the outside.

    Add enough water to just cover the mutton, cover the pot, and simmer gently for 75 to 85 minutes, stirring every 15 minutes, until the shoulder is fork-tender and no pink remains near the bone. If the pot dries before the meat is tender, add small amounts of hot water.

    Remove the lid and simmer for 10 to 15 minutes until the liquid reduces to a thick, clinging, dark masala. Stir frequently so the ghee separates and the masala does not catch.

    Rest the mutton for 5 minutes, then serve hot with plain rice or bread. Wash all utensils and surfaces that touched the raw mutton with hot soapy water.
