Thai Egg Toast

  • 6 Egg
  • 8 slices Bread
  • 1 Tomato
  • 1 Spring Onion
  • 2 tsp Soy Sauce
  • 1 tsp Sugar
  • 4 tsp Cooking Oil
  • 2 tsp Butter
  • 0.5 tsp Black Pepper

    Dice 1 tomato and finely slice 1 spring onion. Crack 6 eggs (beaten) into a bowl and whisk in 2 tsp of soy sauce, 1 tsp of sugar, and 0.5 tsp of black pepper.

    Heat a nonstick frying pan over medium heat for 1 minute. Add 2 tsp of butter and toast 8 slices of bread until both sides are golden brown, about 2 minutes per side. Transfer the toast to serving plates.

    Add 4 tsp of cooking oil to the pan. Pour in the beaten egg mixture and cook for 2 minutes, gently stirring until softly set with no liquid egg remaining. Fold in the diced tomato and sliced spring onion, then cook for 1 minute until the tomato is warmed through.
