Tomato Egg Buns

Soft bread rolls filled with glossy scrambled eggs and juicy pan-cooked tomatoes for a satisfying handheld snack.

INGREDIENTS

  • 6 Egg
  • 2 Tomato
  • 8 slices Bread
  • 4 tbsp Cooking Oil
  • 1 tsp Salt
  • 1 tsp Sugar
  • 0.5 tsp White Pepper

STEPS

    Slice 2 tomatoes into thin wedges. Crack 6 eggs into a bowl, add 1 tsp of salt and 0.5 tsp of white pepper, and whisk until smooth.

    Heat 4 tbsp of cooking oil in a nonstick frying pan over medium heat. Add the beaten egg mixture and gently stir for 60 to 90 seconds, until softly set but still slightly glossy. Transfer to a plate.

    Add the sliced tomato to the same pan and stir-fry for 2 to 3 minutes, until softened and juicy. Add 1 tsp of sugar and stir for 30 seconds. Return the scrambled egg to the pan and fold together for 30 seconds, keeping the curds tender.

    Toast 8 slices of bread in a toaster or dry pan until lightly golden and crisp. Divide the warm tomato and egg mixture between the toasted bread slices and serve immediately.
